Finding Motivation Through New Workout Classes and Delicious Healthy Recipes

Staying motivated on this journey can sometimes feel like a challenge. However, trying new workout classes and experimenting with healthy recipes has added excitement and kept me moving forward - something I have severely struggled with in the past. Recently, I set out to find fresh fitness experiences and tasty meals that nourish my body and thrill my taste buds.
In this post, I’ll share my experiences with a new workout class called Pilates Fusion and two delightful recipes: gluten-free blueberry muffins and chicken taco lettuce wraps. Let’s explore how these adventures have fueled my motivation!
Discovering Pilates Fusion
I had heard about Pilates Fusion, a class that merges traditional mat Pilates with yoga and strength training. The idea of a workout that blends flexibility, core strength, and balance really intrigued me, so I decided to give it a go. Everything I have been learning about Hashimoto's stresses the importance of a balanced workout and avoiding a lot of HIIT workouts which is a workout style I enjoy. Pilates Fusion felt like a good mix so I signed up for the class and was off to the races!
Upon entering the studio, I was nervous btu found a calming atmosphere with soft lighting and soothing music. The instructor was welcoming, encouraging everyone to work at their own pace. As the class started, I quickly realized that Pilates Fusion was not just a test of physical strength; it also required mental focus and mindfulness.
The combination of movements challenged my body in ways I hadn’t expected. I felt my muscles working hard, yet the fluidity of the class kept me engaged and energized. By the end, I was pleasantly surprised by how much I enjoyed it. Did you know that Pilates can improve flexibility by 35% over a 10-week period? This is exactly what I felt after just one session and I am REALLY feeling it the morning after! I left excited and motivated to go back for a second class - a feeling I have been missing in the gym for quite some time.

The Joy of Cooking: Gluten-Free Blueberry Muffins
After an invigorating workout, I felt inspired to whip up something delicious in the kitchen. I found a gluten-free blueberry muffin recipe that promised to be both healthy and satisfying.
The sweet aroma of fresh blueberries combined with honey filled my kitchen as I mixed the batter. Baking these muffins was not just therapeutic; it was a delightful way to reward myself after exercising.
Once they were out of the oven, I couldn’t resist trying one while it was still warm. The texture was moist, and the burst of blueberries was heavenly. These muffins have since become a breakfast staple for me - see the recipe below!

Chicken Taco Lettuce Wraps: A Flavorful Meal
In addition to my muffin adventure, I wanted to create a healthy dinner that was easy to make and full of flavor. Enter chicken taco lettuce wraps!
This recipe was a game-changer. Using crisp lettuce leaves instead of tortillas not only made the meal lighter but added a refreshing crunch. I seasoned the chicken with a mix of spices, sautéed it to perfection, and topped it with fresh corn salsa, avocado, and a squeeze of lime.
The end result was a vibrant and satisfying meal that felt indulgent without the guilt. Each bite was packed with flavor, and I loved the versatility of the wraps. Did you know that swapping out tortillas for lettuce not only helps reduce gluten intake, which I am learning is highly important living with Hashimoto's, but can reduce calories by up to 100 per serving? It was a smart and fun way to enjoy a classic dish while sticking to my health goals.

Gluten Free Blueberry Muffin Ingredients
1/2 cup whole milk
1 tablespoon lemon juice
2 cups almond flour
1/2 cup tapioca flour
3 tablespoons coconut flour
1 tablespoon baking powder
1 teaspoon baking soda
1/2 teaspoon Celtic sea salt
1/2 cup maple sugar or organic cane sugar
1/2 teaspoon almond extract
2 large eggs, lightly beaten
6 tablespoons unsalted butter, melted and cooled
1 pint fresh blueberries
Toppings ingredients:
1/4 cup maple sugar or organic cane sugar
3 tablespoons unsalted butter, softened
1/2 teaspoon ground cinnamon
1 teaspoon coconut flour
Gluten Free Blueberry Muffin Steps
Preheat oven to 350 degrees F and adjust the rack to the middle position. Combine the milk and lemon juice in a small bowl and set aside for 5 minutes.
Place the almond flour, tapioca flour, coconut flour, baking powder, baking soda, sea salt, and maple sugar in the bowl of a food processor (I used a regular bowl and a hand mixer and it worked!). Process for about 8 1-second pulses to combine. Pour the flour mixture into a large mixing bowl. Pour the milk mixture, almond extract, eggs and melted butter into the flour mixture and whisk until combined and no lumps remain. Fold in the blueberries (David is melting down over this step - where my Schitt's Creek fans at??? IYKYK).
Combine the maple sugar, unsalted butter, cinnamon and coconut flour in a small bowl until a thick paste. Using a large cookie scoop or tablespoon, evenly spoon the muffin batter into a muffin tin lined with baking cups. Using a smaller spoon, place little bits of the butter topping on top of each muffin. Bake for 23-25 minutes until just turning golden brown on the top. Cool for 10 minutes. Enjoy!
Chicken Taco Lettuce Wrap Ingredients
1 lb chicken breast, cut into 1 in. cubes
3 tablespoons reduced sodium taco seasoning
2 tablespoons coconut oil
1 head butter lettuce
1 medium tomato, diced
1/2 onion
1/4 cup corn
1/4 cup cilantro
1/2 cup black beans
1-2 avocados
1 lime
Chicken Taco Lettuce Wrap Steps
Heat oil over medium skillet. Place cubed chicken into a bowl and add taco seasoning, mixing so chicken is evenly coated. Add chicken to the skillet and cook until thoroughly cooked, about 7-8 minutes, flipping throughout to ensure even heat. Put chicken aside.
Peel the leaves of the butter lettuce from the core and stack them on a plate.
In a bowl, mix tomato, onion, corn, cilantro, black beans, and lime. (I left the black beans out because I don't like beans). Based on your preference, you can mix the avocado in here or keep it as a separate topping.
Select 2 leaves of lettuce (for stability) and place chicken topped with mix from step 3 and avocado on top. Enjoy!
